Turkey Salad

Ingredients
- 4 cups diced cooked turkey (can substitute chicken)
- 1 stalk celery diced
- 4 green onions chopped
- 1/3 cup chopped fresh parsley
- juice of 1 lemon
- 1 Tbsp extra virgin olive oil
- 2 Tbsp mayonnaise
- salt & pepper to taste

Instructions
- Combine turkey, celery, green onion, lemon juice, salt, pepper, parsley, and olive oil in a medium bowl. Mix well and let stand 30 minutes.
- Add mayonnaise and stir well.
