Sautéed Collard Greens

Ingredients
- 2 bunches collard greens
- 3 Tbsp olive oil
- 1 medium onion chopped
- 4 cloves garlic minced
- 4 ounces pancetta diced
- 2 cups chicken stock
- 1 Tbsp cider vinegar
- salt & pepper to taste

Instructions
- Wash, dry, and remove collard greens from stems. Cut or tear into pieces.
- Heat olive oil in a large deep skillet over medium heat. Add the onion and pancetta and sauté until the onion is softened.
- Add collards and garlic. Sauté until collards start to wilt.
- Add chicken broth and bring to a boil. Reduce heat to a simmer. Cover and simmer for 45 minutes to 1 hour.
- Stir in vinegar, salt, and pepper. Cook uncovered for 5 – 10 minutes.
