Ingredients

collard greens

olive oil

medium
onion
chopped
4
cloves
garlic
minced
4
ounces
pancetta
diced
2
cups
chicken stock
1
Tbsp
cider vinegar
salt & pepper to taste
Instructions
Wash, dry, and remove collard greens from stems. Cut or tear into pieces.
Heat olive oil in a large deep skillet over medium heat. Add the onion and pancetta and sauté until the onion is softened.
Add collards and garlic. Sauté until collards start to wilt.
Add chicken broth and bring to a boil. Reduce heat to a simmer. Cover and simmer for 45 minutes to 1 hour.
Stir in vinegar, salt, and pepper. Cook uncovered for 5 – 10 minutes.
