Salmon Burger

Ingredients
- 2 6 ounce salmon portions 1/4 inch diced
- 2 Tbsp finely diced red onion
- 1 Tbsp diced capers
- 1/2 tsp diced fresh dill
- 1/4 tsp corn starch
- 2 Tbsp ground flaxseed
- 6 Tbsp water
- 1 Tbsp dijon mustard
- 2 Tbsp breadcrumbs

Instructions
- Preheat oven to 400 degrees.
- Gently combine salmon, onion, capers, dill, and corn starch in a mixing bowl.
- Mix flaxseed and water together in a small bowl. Let stand for 3 minutes.
- Add mustard, flaxseed mixture, and breadcrumbs to the salmon mixture. Gently mix until all ingredients are incorporated.
- Line a baking sheet with aluminum foil and spray with non-stick spray.
- Form salmon burgers by hand and place on baking sheet. Spray top of burgers with non-stick spray.
- Bake for 15 minutes.
- Remove baking sheet from the oven and gently turn the salmon burgers.
- Bake for an additional 5 minutes.
Recipe Notes
Can substitute 1 beaten egg for flaxseed mixture.

This was a delicious meal! The capers and the dill really add flavor. I loved doing salmon a different way.
