Rosemary Chicken

Ingredients
- 1/4 tsp minced fresh sage
- 1 tsp minced fresh rosemary
- 1/4 tsp sea salt
- 1/4 tsp black pepper
- 1 Tbsp olive oil
- 1 stalk diced celery
- 2 shallots chopped
- 1 medium tomato diced
- 2 Tbsp capers drained
- 12 Kalamata olives chopped
- 2 Tbsp golden raisins
- 1/2 cup red wine

Instructions
- Preheat oven to 375 degrees.
- Combine sage, rosemary, salt, and pepper in a small bowl. Season each chicken breast on both sides with the herb mixture.
- Heat olive oil in an ovenproof sauté pan over medium high heat.
- Add celery and shallots to the pan and stir. Add chicken breasts and cook for 3 minutes.
- Turn breasts over and add tomatoes and capers. Cook for 2 minutes.
- Add olives, raisins, and red wine. Place pan in the oven and bake for 15 minutes.
