  1. Preheat oven to 375 degrees.
  2. Combine sage, rosemary, salt, and pepper in a small bowl. Season each chicken breast on both sides with the herb mixture.
  3. Heat olive oil in an ovenproof sauté pan over medium high heat.
  4. Add celery and shallots to the pan and stir. Add chicken breasts and cook for 3 minutes.
  5. Turn breasts over and add tomatoes and capers. Cook for 2 minutes.
  6. Add olives, raisins, and red wine. Place pan in the oven and bake for 15 minutes.
