Quinoa Pilaf

Ingredients
- 1 cup quinoa
- 1 3/4 cup chicken stock
- 1/4 cup diced carrot
- 1 green onion chopped
- 2 Tbsp chopped fresh parsley
- 2 Tbsp pine nuts (optional)

Instructions
- Combine quinoa and chicken stock in a medium saucepan and bring to a boil.
- Stir in carrot, green onion, pine nuts, and parsley.
- Cover and reduce heat to a simmer. Simmer for 20 - 25 minutes. Remove from heat and fluff with a fork.
