chicken stock

diced carrot

green onion
chopped

chopped fresh parsley

pine nuts
(optional)
Instructions
Combine quinoa and chicken stock in a medium saucepan and bring to a boil.
Stir in carrot, green onion, pine nuts, and parsley.
Cover and reduce heat to a simmer. Simmer for 20 – 25 minutes. Remove from heat and fluff with a fork.
