Mexican Quinoa

Ingredients
- 1 Tbsp olive oil
- 1 medium onion diced
- 1 clove garlic minced
- 1/2 jalapeno pepper seeded and diced
- 1 cup corn
- 1 15 ounce can black beans
- 1 15 ounce can diced tomatoes
- 1 tsp chili powder
- 1/2 tsp ground cumin
- 3/4 cup quinoa
- 1 cup vegetable stock
- 1 green onion chopped
- 1/4 cup chopped fresh cilantro

Instructions
- In a medium saucepan, sauté onion and jalapeno for 2 minutes.
- Add garlic and stir for 30 seconds.
- Add corn, black beans, tomatoes, quinoa, and spices. Stir until thoroughly blended.
- Add vegetable stock. Stir.
- Cover and simmer 20 minutes.
- Stir in cilantro and green onions.
