Instructions
  1. In a medium saucepan, sauté onion and jalapeno for 2 minutes.
  2. Add garlic and stir for 30 seconds.
  3. Add corn, black beans, tomatoes, quinoa, and spices. Stir until thoroughly blended.
  4. Add vegetable stock. Stir.
  5. Cover and simmer 20 minutes.
  6. Stir in cilantro and green onions.
