Lentil Salad

Ingredients
- 1 cup lentils
- 2 cups chicken stock
- 1/4 cup diced red bell pepper
- 6 ounces sweet corn
- 1 shallot diced
- 3 green onions chopped
- 2 Tbsp chopped fresh cilantro
- 1/2 cucumber seeded and diced
- 18 cherry tomatoes quartered
- 2 cloves garlic minced
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1/2 tsp dried oregano
- 1/4 tsp celery seed
- 1/8 tsp sea salt
- 1/8 tsp black pepper

Instructions
- Combine chicken stock and lentils in a medium saucepan and bring to a boil. Cover, reduce heat, and simmer for 25 minutes.
- Drain any remaining liquid and let cool to room temperature.
- In a small bowl, whisk together garlic, oregano, celery seed, salt, pepper, vinegar, and olive oil.
- In a medium mixing bowl, combine cooked lentils, corn, red pepper, green onions, shallot, cucumber, tomatoes, and cilantro. Mix well.
- Add dressing and toss well.
