Herb Roasted Salmon

Ingredients
- 6 cloves garlic
- 1 bunch fresh basil
- 8 leaves fresh oregano stemmed
- 8 sprigs fresh thyme stemmed
- 2 sprigs fresh rosemary stemmed
- 1/4 tsp sea salt
- 1/4 tsp black pepper
- 1/3 cup olive oil
- zest of 1 lemon
- 4 6 ounce salmon portions
- 1 large lemon cut into 8 slices
- 1 Tbsp capers drained

Instructions
- Preheat oven to 400 degrees.
- Add garlic, lemon zest, salt, pepper, and herbs to a food processor. Pulse for 30 seconds.
- Add olive oil and pulse until a past forms.
- On a sheet pan, place sliced lemons and set the salmon on top of the lemons.
- Rub herb paste on the fish and sprinkle capers over the top.
- Roast on the middle rack of the oven for 20 - 25 minutes.
