Herb Roasted Chicken

Ingredients
- 1 cutup fryer (4 - 5 pounds)
- 1 Tbsp olive oil
- 2 Tbsp fresh thyme
- 2 Tbsp minced fresh rosemary
- salt & pepper to taste
- 1/2 tsp garlic powder
- 1/4 tsp ground sage
- 1/8 tsp paprika

Instructions
- Preheat the oven to 400 degrees.
- Add thyme, rosemary, garlic powder, sage, paprika, salt and pepper to a small bowl. Stir well to combine.
- Using paper towels, pat dry both sides of the chicken pieces.
- Place chicken skin side down on a foil lined baking sheet. Sprinkle with 1/3 of the herb mixture.
- Turn chicken pieces skin side up. Rub a little olive oil on the skin of each chicken piece. Sprinkle with the remaining herb mixture.
- Bake for 45 minutes.
