Grilled Leg of Lamb

Ingredients
- 1 4 - 5 pound boneless leg of lamb butterflied and fat trimmed
- 8 cloves minced garlic
- 2 Tbsp minced fresh rosemary
- 1/8 tsp sea salt
- 1/8 tsp black pepper
- 2 Tbsp lemon juice
- 1/2 cup olive oil

Instructions
- Add all ingredients, except lamb, to a large Ziploc bag. Seal bag and shake well to combine.
- Add lamb to the marinade. Seal bag and turn/shake well to coat. Marinate for 4 hours or overnight (longer is better).
- Grill lamb over medium high heat, turning often until desired doneness (approximately 30 -35 minutes).
- Remove from grill and cover with foil for 5 minutes before slicing.
