Green Peppercorn Sauce

Ingredients
- 3 Tbsp butter
- 1/4 cup shallot diced
- 1/2 cup beef stock
- 3 Tbsp cognac or brandy
- 1 1/2 cup whipping cream
- 3 Tbsp green peppercorns in brine drained
- black pepper to taste

Instructions
- Melt butter in a sauce pan.
- Add shallots and sauté 2 minutes.
- Remove from heat. Add beef stock, whipping cream, cognac, and green peppercorns. Return to heat and bring to a boil.
- Boil until mixture thickens to sauce consistency, about 6 minutes. Season sauce to taste with pepper.
