butter

shallot
diced

cup
beef stock

Tbsp
cognac or brandy
1 1/2
cup
whipping cream

Tbsp
green peppercorns in brine
drained
black pepper to taste
Instructions
Melt butter in a sauce pan.
Add shallots and sauté 2 minutes.
Remove from heat. Add beef stock, whipping cream, cognac, and green peppercorns. Return to heat and bring to a boil.
Boil until mixture thickens to sauce consistency, about 6 minutes. Season sauce to taste with pepper.
