Green Peppercorn Sauce

Instructions
  1. Melt butter in a sauce pan.
  2. Add shallots and sauté 2 minutes.
  3. Remove from heat. Add beef stock, whipping cream, cognac, and green peppercorns. Return to heat and bring to a boil.
  4. Boil until mixture thickens to sauce consistency, about 6 minutes. Season sauce to taste with pepper.
