Chicken Marsala

Ingredients
- 2 pounds chicken breast cutlets
- 5 Tbsp olive oil
- 2 Tbsp butter
- 1 pound sliced mushrooms
- 1/2 cup Marsala wine
- salt & pepper to taste

Instructions
- Heat 2 tablespoons of olive oil in a skillet over medium heat.
- Season both sides of the chicken with salt and pepper.
- Cook chicken until done and lightly browned on both sides.
- Meanwhile, heat 3 tablespoons of olive oil in a second skillet over medium heat and sauté mushrooms.
- Add cooked mushrooms to the chicken.
- Pour Marsala over chicken and mushrooms. Bring to a boil.
- Add butter and reduce heat to simmer. Cook 3 - 5 minutes.
