Caesar Salad
We love caesar salad! But since we try to avoid eggs, we developed this version.

Ingredients
- 2 cloves garlic minced fine
- 1/2 tsp kosher salt
- juice of 1 lemon
- 1/8 - 1/4 cup olive oil
- 3 - 4 Tbsp dijon mustard
- 1 Tbsp worcestershire sauce
- 1/2 tsp anchovy paste (optional)
- 2 Tbsp Parmesan cheese grated
- 1/4 cup croutons

Instructions
- Add finely minced garlic to a small bowl. Add the kosher salt and mash together with a fork into a paste.
- Add the juice of a lemon to the bowl, and add an equal amount of olive oil.
- Add dijon mustard and worcestershire sauce (and optional anchovy paste). Use the fork to blend well into a creamy dressing.
- To make the salad, place the romaine, parmesan cheese, and croutons in a mixing bowl. Pour the dressing over the top and toss the salad well.
