Bison Chorizo Breakfast Hash

Ingredients
- 1/4 pounds bison chorizo (see recipe)
- 2 Tbsp olive oil
- 1 medium roasted sweet potato cubed
- 3 cups fresh spinach
- 1 Tbsp diced red bell pepper
- 1 small zucchini cut in small cubes
- 1 cup black beans drained

Instructions
- Preheat oven to 375.
- Peel sweet potato and cut into cubes.
- Place on a baking sheet. Add 1 tablespoon of olive oil and salt & pepper. Mix well and spread in one layer on baking sheet. Roast for 30 minutes.
- Add 1 tablespoon of olive oil to a large sauté pan. Add chorizo and brown while breaking it up with the back of a spoon. Remove cooked chorizo from the pan.
- Add zucchini and bell pepper to the pan. Sauté for 3 minutes. Add beans and cook for 2 minutes.
- Add chorizo and roasted sweet potato. Mix in well.
- Stir in spinach and cook until wilted.
