bison chorizo
(see recipe)

olive oil

roasted sweet potato
cubed

fresh spinach

diced red bell pepper

zucchini
cut in small cubes

black beans
drained
Instructions
Preheat oven to 375.
Peel sweet potato and cut into cubes.
Place on a baking sheet. Add 1 tablespoon of olive oil and salt & pepper. Mix well and spread in one layer on baking sheet. Roast for 30 minutes.
Add 1 tablespoon of olive oil to a large sauté pan. Add chorizo and brown while breaking it up with the back of a spoon. Remove cooked chorizo from the pan.
Add zucchini and bell pepper to the pan. Sauté for 3 minutes. Add beans and cook for 2 minutes.
Add chorizo and roasted sweet potato. Mix in well.
Stir in spinach and cook until wilted.
