  1. Preheat oven to 375.
  2. Peel sweet potato and cut into cubes.
  3. Place on a baking sheet. Add 1 tablespoon of olive oil and salt & pepper. Mix well and spread in one layer on baking sheet. Roast for 30 minutes.
  4. Add 1 tablespoon of olive oil to a large sauté pan. Add chorizo and brown while breaking it up with the back of a spoon. Remove cooked chorizo from the pan.
  5. Add zucchini and bell pepper to the pan. Sauté for 3 minutes. Add beans and cook for 2 minutes.
  6. Add chorizo and roasted sweet potato. Mix in well.
  7. Stir in spinach and cook until wilted.
