Baked Halibut with Lemon Caper Sauce

Ingredients
- 4, 6 ounce halibut filets
- 3 Tbsp olive oil
- 3 cloves minced garlic
- 2 Tbsp minced shallot
- 2 Tbsp capers drained
- 3 Tbsp chopped Italian parsley
- zest of 1 lemon
- juice of 1 lemon
- salt & pepper to taste

Instructions
- Preheat oven to 400°F.
- In a small bowl, combine 2 cloves of minced garlic, lemon zest, and 1 tablespoon of chopped parsley.
- In a large nonstick baking dish, add halibut skin side down and drizzle with 1 tablespoon of oil. Season with salt & pepper.
- Top each filet with the garlic, parsley, and lemon zest mixture. Bake for 20 minutes, until halibut flakes easily when tested with a fork.
- Meanwhile, heat 2 tablespoons of olive oil in a small saucepan. Add shallot and 1 clove of mince garlic. Sauté for one minute stirring constantly.
- Stir in capers, 2 tablespoons chopped parsley, and lemon juice. Cook for one minute and remove from heat.
- Remove halibut from oven. Plate the fish and spoon lemon caper sauce over the top.
