Baked Cod with Tomatoes and Olives

Ingredients
- 2 6 oz. portions cod (can also use halibut)
- 1/4 cup Kalamata olives chopped
- 1/2 cup tomatoes chopped
- 1 shallot diced
- 2 Tbsp capers drained
- 1/4 cup dry white wine
- 3 Tbsp olive oil
- salt & pepper to taste

Instructions
- Heat oven to 425 degrees.
- Chop olives, garlic, tomato, and shallots. Combine in a bowl along with capers, wine, and olive oil. Stir well.
- Rinse off cod and pat dry. Salt & pepper each side of the fish, and place in a small baking dish.
- Spoon half the tomato and olive mixture over each fish portion.
- Bake for 20 - 25 minutes.
