Baked Cod with Tomatoes and Olives

Ingredients

cod
(can also use halibut)
1/4
cup
Kalamata olives
chopped
1/2
cup
tomatoes
chopped
1
shallot
diced
2
Tbsp
capers
drained
1/4
cup
dry white wine
3
Tbsp
olive oil
salt & pepper to taste
Instructions
Heat oven to 425 degrees.
Chop olives, garlic, tomato, and shallots. Combine in a bowl along with capers, wine, and olive oil. Stir well.
Rinse off cod and pat dry. Salt & pepper each side of the fish, and place in a small baking dish.
Spoon half the tomato and olive mixture over each fish portion.
Bake for 20 – 25 minutes.
