Instructions
  1. Heat oven to 425 degrees.
  2. Chop olives, garlic, tomato, and shallots. Combine in a bowl along with capers, wine, and olive oil. Stir well.
  3. Rinse off cod and pat dry. Salt & pepper each side of the fish, and place in a small baking dish.
  4. Spoon half the tomato and olive mixture over each fish portion.
  5. Bake for 20 – 25 minutes.
