Baked Chicken Fajitas

Ingredients
- 1 pound boneless, skinless chicken breast cut into strips
- 3 Tbsp olive oil
- 2 1/2 tsp chili powder
- 2 tsp ground cumin
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/8 tsp sea salt
- 1/8 tsp black pepper
- 3/4 tsp dried Mexican oregano
- 1 medium onion sliced
- 1/2 red bell pepper cut into strips
- 1/2 yellow bell pepper cut into strips
- 1/2 Anaheim pepper cut into strips
- 1 15 ounce can diced tomatoes with green chilies
- juice of 1 lime

Instructions
- Preheat oven to 400 degrees.
- In a large Ziploc bag, combine oil and spices and mix well. Add chicken, seal the bag and toss well until all chicken pieces are coated.
- Add onions, peppers, and tomatoes to the chicken. Seal the bag and toss well.
- Pour the mixture into a baking dish that has been sprayed with non-stick spray. Distribute evenly.
- Squeeze the lime over the top.
- Bake for 20 – 25 minutes.
