boneless, skinless chicken breast

red bell pepper
cut into strips

yellow bell pepper
cut into strips

Anaheim pepper
cut into strips

15 ounce can
diced tomatoes with green chilies
juice of 1 lime
Instructions
Preheat oven to 400 degrees.
In a large Ziploc bag, combine oil and spices and mix well. Add chicken, seal the bag and toss well until all chicken pieces are coated.
Add onions, peppers, and tomatoes to the chicken. Seal the bag and toss well.
Pour the mixture into a baking dish that has been sprayed with non-stick spray. Distribute evenly.
Squeeze the lime over the top.
Bake for 20 – 25 minutes.
