Udon Noodle Salad with Peanut Sauce

Ingredients
Salad
- 1 8 ounce package udon noodles
- 1 1/2 cups shredded cabbage
- 1 cup shredded carrots
- 1/2 red bell pepper cut into strips
- 2 chopped green onions
- 3 Tbsp chopped cilantro
- 1 cup edamame
- optional protein (grilled chicken breast or grilled shrimp)
Peanut Sauce
- 1/3 cup creamy peanut butter
- 1/4 cup low sodium soy sauce
- 2 Tbsp chili garlic sauce
- 3 Tbsp rice wine vinegar
- 3 Tbsp honey
- 1 Tbsp lime juice
- 2 tsp ground ginger
- 2 cloves minced garlic

Instructions
- In a small bowl, combine the peanut sauce ingredients. Stir well to combine.
- Cook udon noodles per package directions. Meanwhile, in a large bowl, assemble the rest of the salad ingredients.
- Drain noodles and run under cold water to stop cooking process.
- Add noodles to the salad. Add peanut sauce and stir to combine.
- Stir in any optional protein and serve.
