udon noodles

shredded cabbage

shredded carrots

red bell pepper
cut into strips

chopped green onions

chopped cilantro

edamame
optional protein
(grilled chicken breast or grilled shrimp)
Peanut Sauce

cup
creamy peanut butter
1/4
cup
low sodium soy sauce

chili garlic sauce

rice wine vinegar

Tbsp
honey

Tbsp
lime juice

tsp
ground ginger

cloves
minced garlic
Instructions
In a small bowl, combine the peanut sauce ingredients. Stir well to combine.
Cook udon noodles per package directions. Meanwhile, in a large bowl, assemble the rest of the salad ingredients.
Drain noodles and run under cold water to stop cooking process.
Add noodles to the salad. Add peanut sauce and stir to combine.
Stir in any optional protein and serve.
