Turkey Meatloaf

Ingredients
- 1 pound lean ground turkey
- 1 medium shallot finely chopped
- 2 green onions chopped
- 2 roasted red bell pepper (from a jar) finely chopped
- 4 Tbsp yellow mustard
- 2 Tbsp brown sugar
- 6 Tbsp reduced sugar ketchup (plus extra for topping the meatloaf)
- 1/2 - 3/4 cup bread crumbs
- 1/4 tsp celery salt

Instructions
- Preheat oven to 350 degrees.
- In a medium bowl, mix together turkey, shallot, green onions, bell pepper, mustard, brown sugar, and ketchup.
- Mix in bread crumbs in batches until just enough to make the mixture hold together.
- Spray a 5 x 9 inch loaf pan with non-stick spray. Add mixture to the pan and press down firmly to even out the meatloaf in the pan.
- Cover top of meatloaf with ketchup and sprinkle with celery salt.
- Bake for 45 minutes.

This is a delicious meat loaf–full of flavor! I made enough for left-overs which we enjoyed the next day. It’s quick and nutritious.
