Stuffed Jumbo Shells

Ingredients
- 1 pound bulk Italian sausage
- 1 box jumbo shells
- 8 ounces ricotta cheese
- 1/4 tsp dried oregano
- 16 ounces grated mozzarella cheese
- 8 - 12 ounces spaghetti sauce

Instructions
- Preheat oven to 350 degrees
- Brown sausage in a large pan until crumbly. Drain extremely well. Place sausage in a large bowl and let cool 10 – 15 minutes.
- Meanwhile, cook jumbo shells until three quarters done. Drain and rinse with cold water.
- Add the oregano and ricotta to the sausage and mix until all ingredients are incorporated well.
- Spray 9 x 13 baking dish with non-stick spray. Add just enough spaghetti sauce to cover the bottom of the baking dish.
- Stuff shells with sausage mixture and place in baking dish. Pour remaining sauce over the top of the manicotti and cover with mozzarella.
- Bake for 30 minutes.
