Spinach Salad with Warm Bacon Dressing

Ingredients
- 1 6 ounce bag baby spinach
- 4 mushrooms sliced
- 6 strips bacon cooked and crumbled
- 3 Tbsp bacon drippings
- 3 Tbsp red wine vinegar
- 1/2 tsp honey
- 1 Tbsp dijon mustard
- 1 Tbsp blue cheese crumbles

Instructions
- Combine spinach, mushrooms, and crumbled bacon in a medium mixing bowl.
- Combine bacon drippings, vinegar, honey, and mustard in a small saucepan. Whisk together over a medium heat until warmed through. Remove from heat and pour over salad.
- Toss the salad and place in serving bowls. Sprinkle blue cheese crumbles over the top.
