Seared Scallops with Sautéed Mixed Greens and Farro

Ingredients
- 8 - 10 sea scallops
- 1 bunch Swiss chard
- 1 bunch mustard greens
- 1 bunch kale
- 1 shallot sliced
- 4 cloves garlic chopped
- 4 ounces diced pancetta
- 1 15 ounce can cannellini beans (drained)
- 2 cups cooked farro
- 2 Tbsp olive oil
- 1 Tbsp red wine vinegar
- salt & pepper to taste

Instructions
- Rinse scallops under cold water and pat dry.
- Remove greens from stems and tear into bite size piece.
- Heat oil in a large skillet over medium high heat. Add pancetta, shallot, and garlic and cook for 1 minute stirring constantly.
- Add greens and sauté stirring frequently until wilted. Salt & pepper to taste. Add the vinegar and stir until evaporated.
- Add farro and beans. Stir to combine.
- Meanwhile, heat a large sauté pan over medium high heat. When the pan is hot, add the scallops. Cook for 2 minutes. Turn and cook for another 1 – 2 minutes. Remove from heat.
- Place farro/greens mixture on the plate and place scallops on top.
