Remove greens from stems and tear into bite size piece.
Heat oil in a large skillet over medium high heat. Add pancetta, shallot, and garlic and cook for 1 minute stirring constantly.
Add greens and sauté stirring frequently until wilted. Salt & pepper to taste. Add the vinegar and stir until evaporated.
Add farro and beans. Stir to combine.
Meanwhile, heat a large sauté pan over medium high heat. When the pan is hot, add the scallops. Cook for 2 minutes. Turn and cook for another 1 – 2 minutes. Remove from heat.
Place farro/greens mixture on the plate and place scallops on top.
