Seared Scallops with Sautéed Mixed Greens and Farro

  1. Rinse scallops under cold water and pat dry.
  2. Remove greens from stems and tear into bite size piece.
  3. Heat oil in a large skillet over medium high heat. Add pancetta, shallot, and garlic and cook for 1 minute stirring constantly.
  4. Add greens and sauté stirring frequently until wilted. Salt & pepper to taste. Add the vinegar and stir until evaporated.
  5. Add farro and beans. Stir to combine.
  6. Meanwhile, heat a large sauté pan over medium high heat. When the pan is hot, add the scallops. Cook for 2 minutes. Turn and cook for another 1 – 2 minutes. Remove from heat.
  7. Place farro/greens mixture on the plate and place scallops on top.
