Sautéed Shrimp with Farro and Swiss Chard

Ingredients
- 1 small onion chopped
- 4 strips turkey bacon cut in 2 inch pieces
- 4 cups chopped Swiss chard
- 1 pound large shrimp peeled and deveined
- 2 cups cooked farro
- 1 cup black eyed peas drained
- 1/4 cup chicken stock
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 3 Tbsp chopped parsley
- 2 Tbsp olive oil

Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add onion and turkey bacon. Sauté for 7-8 minutes.
- Add chopped chard, salt, and pepper and sauté another 5-6 minutes until the chard is wilted. Remove from the skillet into a bowl.
- Add the remaining tablespoon of olive oil to the pan.
- In two batches, sear shrimp for 2 minutes per side in the pan. Remove the shrimp and let the shrimp rest on a plate.
- Add the chard mixture back to the skillet along with farro (can substitute barley), black-eyed peas, and chicken stock.
- Let cook for 5 minutes. Sprinkle the chopped fresh parsley over the top.

I will have to make this! question for the chef: I have never cooked shrimp. Can I buy it peeled and veined?
