Sautéed Shrimp with Farro and Swiss Chard

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add onion and turkey bacon. Sauté for 7-8 minutes.
  2. Add chopped chard, salt, and pepper and sauté another 5-6 minutes until the chard is wilted. Remove from the skillet into a bowl.
  3. Add the remaining tablespoon of olive oil to the pan.
  4. In two batches, sear shrimp for 2 minutes per side in the pan. Remove the shrimp and let the shrimp rest on a plate.
  5. Add the chard mixture back to the skillet along with farro (can substitute barley), black-eyed peas, and chicken stock.
  6. Let cook for 5 minutes. Sprinkle the chopped fresh parsley over the top.

  • I will have to make this! question for the chef: I have never cooked shrimp. Can I buy it peeled and veined?
