Sautéed Shrimp with Farro and Swiss Chard

turkey bacon
cut in 2 inch pieces

chopped Swiss chard

pound
large shrimp
peeled and deveined

cooked farro
1
cup
black eyed peas
drained

chicken stock
1/2

sea salt
1/2
tsp
black pepper

chopped parsley

olive oil
Instructions
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add onion and turkey bacon. Sauté for 7-8 minutes.
Add chopped chard, salt, and pepper and sauté another 5-6 minutes until the chard is wilted. Remove from the skillet into a bowl.
Add the remaining tablespoon of olive oil to the pan.
In two batches, sear shrimp for 2 minutes per side in the pan. Remove the shrimp and let the shrimp rest on a plate.
Add the chard mixture back to the skillet along with farro (can substitute barley), black-eyed peas, and chicken stock.
Let cook for 5 minutes. Sprinkle the chopped fresh parsley over the top.
