Roasted Butternut Squash

Instructions
  1. Preheat oven to 375 degrees.
  2. Peel butternut squash and cut in half. Remove seeds.
  3. Cut squash into bite sized pieces and place in a large ziploc bag. Add olive oil. Seal bag and shake to evenly coat squash.
  4. Pour squash onto a foil lined baking sheet, and evenly distribute in a single layer. Salt and pepper to taste.
  5. Bake for 45 - 60 minutes.
