Oven Baked Falafel

Ingredients
- 1 15 ounce can chickpeas (garbanzo beans) drained
- 1 shallot chopped
- 4 cloves garlic chopped
- 8 - 10 fresh mint leaves
- 1/2 bunch fresh Italian parsley
- 1/4 tsp kosher salt
- 1/8 tsp cayenne pepper
- 1 tsp ground cumin
- 1/4 cup ground flaxseed
- juice of one lemon
- 1/4 cup olive oil

Instructions
- Preheat oven to 375 degrees.
- Combine all ingredients except chickpeas in a food processor. Process until herbs are chopped and everything is well combined.
- Add chickpeas and process well until the mixture until it forms a smooth paste.
- Prepare a baking sheet with parchment paper and non-stick spray.
- Scoop 1 heaping tablespoon of dough at a time and form into patties and place them on the baking sheet. (The dough will be wet.)
- Cook for 20 minutes. Remove them from the oven and let them cool for five or so minutes, then flip them carefully and cook for an additional 10 - 15 minutes.
