Moroccan Lamb Meatballs

Ingredients
Meatballs
- 1 pound ground lamb
- 1 Tbsp chopped fresh parsley
- 1 tsp chopped fresh mint
- 2 Tbsp pine nuts
- 1/2 tsp paprika
- 1/2 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cumin
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
Sauce
- 1 Tbsp olive oil
- 1 medium onion diced
- 3 cloves minced garlic
- 1 14.5 ounce can diced tomatoes
- 1 8 ounce can tomato sauce
- 1 Tbsp tomato paste
- 1/2 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1 Tbsp chopped fresh parsley

Instructions
- Preheat the oven to 350 degrees.
- In a large bowl, combine lamb, parsley, mint, pine nuts, paprika, coriander, cinnamon, cumin, salt and pepper. Mix well and form into 2-inch meatballs.
- Place meatballs on a baking sheet. Bake for 30 minutes.
- Meanwhile, heat olive oil in a large skillet. Add the onion and garlic and cook stirring constantly for 3 - 4 minutes. Add tomatoes, tomato sauce, tomato paste, cinnamon, coriander, salt, and pepper. Stir well to combine.
- Bring the sauce to a boil, then cover and reduce to a simmer.
- Remove meatballs from the oven and add to the sauce, turning them several times to coat them. Cover and simmer the meatballs for 10 – 15 minutes.
- Remove cover and garnish with parsley.
