Mediterranean Chicken

Ingredients
- 3 Tbsp red wine vinegar
- 3 Tbsp olive oil
- 2 Tbsp dijon mustard
- zest of 1 lemon
- 4 cloves garlic minced
- 1 Tbsp chopped fresh rosemary
- 1/4 tsp paprika
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1 cup Kalamata olives pitted
- 1/2 cup white wine
- 2 Tbsp slivered almonds
- 8 boneless skinless chicken thighs

Instructions
- In a large ziploc bag add vinegar, mustard, olive oil, garlic, lemon zest, salt, pepper, paprika, and rosemary. Shake to combine.
- Add chicken and olives and swish around to ensure all chicken is coated with the marinade. Refrigerate a minimum of 4 hours, or overnight.
- Preheat oven to 375.
- Transfer chicken and marinade into a 9 x 13 baking dish making a single layer.
- Pour wine into the baking dish. Bake for 90 minutes.
- Sprinkle with slivered almond after removing from oven.
