Lentil Soup

Ingredients
- 1 cup green lentils
- 1 onion chopped
- 1 carrot chopped
- 1 clove garlic minced
- 2 Tbsp olive oil
- 4 cups chicken stock
- 1 Tbsp ground cumin
- 1 tsp ground turmeric
- 1/4 tsp ground coriander
- 2 Tbsp chopped parsley
- juice of 1 lemon
- 1/4 tsp sea salt
- 1/4 tsp black pepper

Instructions
- Sauté onions in olive oil until lightly browned. Stir in garlic.
- Add lentils and stir with onions and garlic for one to two minutes.
- Add chicken stock. Cover and cook over low heat for one hour.
- Stir in cumin, turmeric, salt, pepper, and coriander. Cook for another 5 – 10 minutes.
- Add lemon juice and parsley. Stir and remove from the heat. Allow to cool 5 – 10 minutes.
- Blend the soup thoroughly with an immersion blender; or, in batches with a food processor.
