Instructions
  1. Sauté onions in olive oil until lightly browned. Stir in garlic.
  2. Add lentils and stir with onions and garlic for one to two minutes.
  3. Add chicken stock. Cover and cook over low heat for one hour.
  4. Stir in cumin, turmeric, salt, pepper, and coriander. Cook for another 5 – 10 minutes.
  5. Add lemon juice and parsley. Stir and remove from the heat. Allow to cool 5 – 10 minutes.
  6. Blend the soup thoroughly with an immersion blender; or, in batches with a food processor.
