Kristy’s Caprese Stuffed Chicken

Instructions
  1. Preheat oven to 375 degrees.
  2. Cut a pocket the entire length of each chicken breast taking care not to cut all the way through the width of the breast.
  3. Line the bottom of the pocket with 2 basil leaves.
  4. Add 1 ½ slices of mozzarella on top of the basil.
  5. Add the tomato slices on top of the cheese, and top with 2 more basil leaves.
  6. Use a skewer to close the pocket.
  7. Place stuffed breasts on a baking dish. Season the top with salt and pepper.
  8. Bake for 30 minutes.
  9. Remove from oven and let rest for 5 minutes.
  10. Place breasts on serving plates and drizzle balsamic vinegar over the top.
