Kristy’s Caprese Stuffed Chicken

Ingredients
- 2 boneless, skinless chicken breasts
- 2 tomatoes thinly sliced
- 3 1/4 inch thick slices fresh mozzarella cheese
- 8 large leaves fresh basil
- 1/2 tsp aged balsamic vinegar
- salt & pepper to taste
- 2 bamboo skewers

Instructions
- Preheat oven to 375 degrees.
- Cut a pocket the entire length of each chicken breast taking care not to cut all the way through the width of the breast.
- Line the bottom of the pocket with 2 basil leaves.
- Add 1 ½ slices of mozzarella on top of the basil.
- Add the tomato slices on top of the cheese, and top with 2 more basil leaves.
- Use a skewer to close the pocket.
- Place stuffed breasts on a baking dish. Season the top with salt and pepper.
- Bake for 30 minutes.
- Remove from oven and let rest for 5 minutes.
- Place breasts on serving plates and drizzle balsamic vinegar over the top.
