boneless, skinless chicken breasts

tomatoes
thinly sliced

1/4 inch thick slices
fresh mozzarella cheese
8
large leaves
fresh basil
1/2
tsp
aged balsamic vinegar
salt & pepper to taste
2
bamboo skewers
Instructions
Preheat oven to 375 degrees.
Cut a pocket the entire length of each chicken breast taking care not to cut all the way through the width of the breast.
Line the bottom of the pocket with 2 basil leaves.
Add 1 ½ slices of mozzarella on top of the basil.
Add the tomato slices on top of the cheese, and top with 2 more basil leaves.
Use a skewer to close the pocket.
Place stuffed breasts on a baking dish. Season the top with salt and pepper.
Bake for 30 minutes.
Remove from oven and let rest for 5 minutes.
Place breasts on serving plates and drizzle balsamic vinegar over the top.
