Italian Squash with Cherry Tomatoes

Ingredients
- 2 zucchini
- 1 yellow squash
- 1 shallot chopped
- 3 cloves garlic sliced
- 2 Tbsp olive oil
- 15 to 18 cherry tomatoes halved
- salt & pepper to taste
- 2 leaves fresh basil (optional) chopped

Instructions
- Cut zucchini and yellow squash in half lengthwise. Slice each half into 4 pieces lengthwise, then quarter those slices.
- Heat a large sauté pan over medium high heat. Add olive oil and squash. Stir fry until squash is just starting to soften and a little brown. Add salt & pepper to taste and stir to combine.
- Add shallot and garlic. Stir to mix through and cook 2 additional minutes.
- Add cherry tomatoes. Stir to mix through and remove from heat. Sprinkle chopped basil over the top.
