zucchini

yellow squash

shallot
chopped

cloves
garlic
sliced

olive oil

cherry tomatoes
halved
salt & pepper to taste

leaves
fresh basil (optional)
chopped
Instructions
Cut zucchini and yellow squash in half lengthwise. Slice each half into 4 pieces lengthwise, then quarter those slices.
Heat a large sauté pan over medium high heat. Add olive oil and squash. Stir fry until squash is just starting to soften and a little brown. Add salt & pepper to taste and stir to combine.
Add shallot and garlic. Stir to mix through and cook 2 additional minutes.
Add cherry tomatoes. Stir to mix through and remove from heat. Sprinkle chopped basil over the top.
