Italian Squash with Cherry Tomatoes

  1. Cut zucchini and yellow squash in half lengthwise. Slice each half into 4 pieces lengthwise, then quarter those slices.
  2. Heat a large sauté pan over medium high heat. Add olive oil and squash. Stir fry until squash is just starting to soften and a little brown. Add salt & pepper to taste and stir to combine.
  3. Add shallot and garlic. Stir to mix through and cook 2 additional minutes.
  4. Add cherry tomatoes. Stir to mix through and remove from heat. Sprinkle chopped basil over the top.
