Grilled Steak Caprese with Balsamic Dressing

Ingredients
- 2 Kansas City strip steaks
- 1 TBS extra virgin olive oil
- salt and pepper to taste
- 2 cups cherry tomatoes halved
- 8 ounces fresh mini mozzarella cheese balls (cherry sized)
- 1 cup chopped fresh basil
- 1/4 cup balsamic vinegar
- 1/2 cup extra virgin olive oil
- 1 TBS honey
- 1 clove minced garlic

Instructions
- Preheat grill to medium-high heat.
- Rub the steaks with olive oil and season generously with salt and pepper. Grill the steaks until they reach desired doneness. Remove from the grill and let rest for 5 minutes.
- While the steak is resting, prepare the Caprese salad. In a bowl, combine the cherry tomatoes, mozzarella, and basil leaves.
- In a small bowl, whisk together balsamic vinegar, extra virgin olive oil, honey, and minced garlic to create the dressing.
- Slice the steaks into thin strips. Arrange the sliced steak on plates, followed by the Caprese salad mixture on top. Drizzle the balsamic dressing over the steak and salad before serving.
