Greek Lemon Potatoes

Ingredients
- 4 medium russet potatoes
- 2 cloves minced garlic
- 1 tsp dried oregano
- 1/8 tsp sea salt
- 1/8 tsp black pepper
- 1/4 cup olive oil
- juice of 2 lemons (about 1/2 cup)

Instructions
- Add all ingredients except potatoes in a large Ziploc bag. Close bag and shake to mix well.
- Peel potatoes and cut in half lengthwise. Use paper towels to dry potatoes.
- Add potatoes to the bag and turn to coat. Marinate for 2 hours or up to 24 hours.
- Preheat oven to 400 degrees.
- Add potatoes and marinade to a baking dish. Bake for 1 hour, turning occasionally.
- Place under the broiler for 5 minutes to crisp up.
