Ingredients

russet potatoes

cloves
minced garlic

dried oregano

sea salt

black pepper

olive oil
juice of 2 lemons
(about 1/2 cup)
Instructions
Add all ingredients except potatoes in a large Ziploc bag. Close bag and shake to mix well.
Peel potatoes and cut in half lengthwise. Use paper towels to dry potatoes.
Add potatoes to the bag and turn to coat. Marinate for 2 hours or up to 24 hours.
Preheat oven to 400 degrees.
Add potatoes and marinade to a baking dish. Bake for 1 hour, turning occasionally.
Place under the broiler for 5 minutes to crisp up.
