Ginny’s 3-Hour Beef Stew

Ingredients
- 2 pounds stew beef
- 1 15 ounce can diced tomatoes
- 6 small carrots chopped
- 2 medium potatoes chopped
- 1 stalk celery diced
- 1 medium onion chopped
- 1/8 tsp kosher salt
- 1/8 tsp black pepper
- 3 Tbsp tapioca
- 2 cups beef stock

Instructions
- Preheat oven to 325 degrees.
- Do not brown stew meat. Spray 3 quart casserole dish with non-stick spray.
- Place stew meat in the bottom of casserole.
- Add potatoes, onions, celery, and carrots. Sprinkle salt, pepper, and tapioca over the top.
- Pour the tomatoes over the top. Pour beef stock over the top.
- Cover and bake for 3 hours.
