Garlic Shrimp with White Beans and Tomatoes

Ingredients
- 1 pound medium shrimp peeled and deveined
- 4 Tbsp olive oil
- 1 tsp smoked paprika
- 3 - 4 cloves garlic minced
- 1/2 tsp red pepper flakes
- 1 bay leaf broken into pieces
- 1 14.5 ounce can petite-diced tomatoes drained
- 1 Tbsp tomato paste
- 2 15 ounce cans white beans drained
- 1 cup chicken stock
- 2 Tbsp fresh parsley chopped

Instructions
- Heat a large skillet over medium high heat.
- Toss shrimp with 1 tablespoon oil and smoked paprika.
- Add shrimp to skillet. Sauté 1 to 2 minutes, and add half the garlic the last few seconds of cooking. Spoon shrimp into a bowl and set aside.
- Return skillet to heat. Add 2 tablespoons oil, pepper flakes, bay leaf, and remaining garlic. Cook for 30 seconds.
- Add tomatoes and cook 2 minutes. Stir in the tomato paste and cook until the tomato mixture darkens.
- Add beans and chicken stock. Simmer 5 - 10 minutes until it thickens.
- Stir in shrimp and parsley. Cook 5 minutes until shrimp are heated through.
