Garlic Shrimp with White Beans and Tomatoes

  1. Heat a large skillet over medium high heat.
  2. Toss shrimp with 1 tablespoon oil and smoked paprika.
  3. Add shrimp to skillet. Sauté 1 to 2 minutes, and add half the garlic the last few seconds of cooking. Spoon shrimp into a bowl and set aside.
  4. Return skillet to heat. Add 2 tablespoons oil, pepper flakes, bay leaf, and remaining garlic. Cook for 30 seconds.
  5. Add tomatoes and cook 2 minutes. Stir in the tomato paste and cook until the tomato mixture darkens.
  6. Add beans and chicken stock. Simmer 5 – 10 minutes until it thickens.
  7. Stir in shrimp and parsley. Cook 5 minutes until shrimp are heated through.
