Ingredients

medium shrimp
peeled and deveined

olive oil

smoked paprika

garlic

red pepper flakes

bay leaf
broken into pieces

14.5 ounce can
petite-diced tomatoes
drained

Tbsp
tomato paste

15 ounce cans
white beans
drained
1
cup
chicken stock

Tbsp
fresh parsley
chopped
Instructions
Heat a large skillet over medium high heat.
Toss shrimp with 1 tablespoon oil and smoked paprika.
Add shrimp to skillet. Sauté 1 to 2 minutes, and add half the garlic the last few seconds of cooking. Spoon shrimp into a bowl and set aside.
Return skillet to heat. Add 2 tablespoons oil, pepper flakes, bay leaf, and remaining garlic. Cook for 30 seconds.
Add tomatoes and cook 2 minutes. Stir in the tomato paste and cook until the tomato mixture darkens.
Add beans and chicken stock. Simmer 5 – 10 minutes until it thickens.
Stir in shrimp and parsley. Cook 5 minutes until shrimp are heated through.
